Our Head Chef Danny Holloway has invested so much to ensure our new menu pushes the whole Butchers experience to a new level. "Dishes aren't created in the kitchen, thats where we finesse an idea thats already been cooked in our minds. You need to break out of that bubble you are in when you're at the restaurant. I started where we did on day one, locally, with our suppliers who share our passion for the region and great produce."
The new menu is not a complete overhaul by any means, Danny sees seasonal changes as a tune up rather than a complete strip down and rebuild. "There's the old phrase "if it ain't broke, don't fix it" and I agree with that, but I'm also a big believer of keeping things moving on and when you work with fresh produce you absolutely have to react to whats available at the time."
"The new dishes I've put on this menu reflect the best meat, veg, fruit and dairy this region has to offer and I'm proud of that. If you take real care about the selecting the ingredients then creating something in the kitchen that people will really enjoy should be the easy part. Well fingers crossed anyway! Ha ha!"
